These chinese takeout chicken wings are different from your regular seasoned and fried wings. This style of wing is made with a semi-wet batter. There is no buttermilk bath, however there is an egg and cornstarch involved. When the cornstarch and egg bind together, it creates these creases and crevice’s that just make these wings exceptionally crispy.

The flavors of this dish are not to be forgotten either. The sesame oil brings in a nutty flavor, along with the pungent white pepper. Those two flavors paired with the cooking wine to balance everything out create a savory and salty flavor that you’ll just want to keep on eating.

Ingredients
  

  • 8 Whole chicken wings
  • 3 tbsp all purpose seasoning no paprika or reddish colors
  • 2 tsp white pepper
  • 1 tsp turmeric
  • 2 tbsp sesame oil
  • 1 tbsp Shaoxing wine
  • 1 egg
  • 6 tbsp cornstarch divided
  • oil for frying

Instructions
 

  • Take your cleaned chicken wings and season them with all purpose seasoning, white pepper, turmeric, sesame oil, Shaoxing wine, 3 tbsp. of the cornstarch, and 1 egg. Toss well to combine, cover, and refrigerate for 30 minutes.
  • Remove from refrigerator and add remaining cornstarch. Toss once more.
  • Heat oil to 360℉ and begin deep frying your wings, being mindful to not overcrowd the pan.
    Fry for about 8-10 minutes and remove from oil. Place on paper towel or preferably a cooling rack to drain any excess oil. Serve immediately.
