Copycat Chicken and Gnocchi Soup
Ingredients
- 2 cups chicken breast diced
- 1 small onion diced
- 2 cups carrots shredded
- 2 stalks celery sliced
- 6 tbsp unsalted butter
- 1/4 cup all purpose flour
- 3 cups chicken stock
- 2 cups half & half
- 1/2 lb ready to use gnocchi
- 3 cups spinach
- A pinch of nutmeg
- 3 tbsp Pretty Girls Eat Too All Purpose Seasoning
- 3 tbsp black pepper
Instructions
- Saute chicken breast over medium-high heat, while in a seperate pot, add 2 tbsp butter along with the onion, carrot, and celery. Cook over medium heat until the onion is translucent. Set chicken aside once cooked.
- Add remaining 4 tbsp of butter and melt. Once melted, add flour and whisk until all veggies are coated and its smooth. Cook for 1-2 minutes.
- In half cup increments, add in half and half and whisk until smooth. Lower heat to medium-low and let simmer until thickened. Follow with chicken stock and chicken breast. Let simmer for 20 minutes
- Once soup is reduced, add chicken breast, gnocchi, spinach, nutmeg, and all purpose S=seasoning. Let simmer for another 5 minutes, and its ready to serve!
