Corn Ribs (Elote Style)
This fun corn ribs alternative to boring corn on the cob will have you addicted! Then to dip it in the delicious chili lime aioli will have you coming back for more every time! Not to mention its a vegetable so there’s no need to feel guilt! Make this the next addition to your taco nights!


Elote Corn Ribs with a Chili Lime Aioli
Equipment
- 1 baking sheet
- 1 grilling brush
Ingredients
- 4 ears corn
- 3 tbsp olive oil
- 1 tbsp chili powder
- juice and zest of one lemon
- 1 tbsp salt
- Cilantro to garnish
- cotija cheese to garnish
Aioli
- 1 cup sour cream
- juice of one lemon
- 1½ tbsp chili powder
- ½ tbsp salt
- 3 tbsp cilantro minced
Instructions
- Preheat oven to 375℉
- In a small bowl, mix together oil, chili powder, lemon zest, juice, and salt.
- Cut corn the long way and cut until you have rib like pieces. One ear of corn should turn into 8 pieces !
- Brush the mixture generously onto your corn and bake for 20 minutes or until cooked thoroughly.
- In a separate bowl, mix together sour cream, lime juice, cilantro, chili powder, and salt.
- Garnish with chili powder, cotija cheese, and lime wedges
