Broccoli Cheddar Soup

Also a great soup to make to combat those cold weather months!
Broccoli Cheddar Soup
Equipment
- 1 Stock pot
- 1 Cheese grater
- 1 Whisk
Ingredients
- 1 large broccoli floret chopped
- 1 medium onion diced
- 1 celery stalk sliced
- 1 1/2 cup carrots shredded
- 2 cloves garlic chopped
- 1/4 cup flour
- 6 tbsp butter
- 1 1/2 cup half and half
- 2 1/2 cup chicken broth
- 2 cups cheddar cheese
- Pretty Girls Eat Too All Purpose Seasoning
- 3 tbsp black pepper
Instructions
- In a pot over medium-high heat, saute onions, carrot, and celery until the onion is translucent. Set aside. In the same pot, melt the butter and whisk in the flour. Cook for 1 minute.
- Slowly whisk in the half and half until smooth. Lower heat to medium-low and let thicken for 10 minutes. Add in chicken broth and garlic. Let simmer for another 10 minutes.
- Once soup is reduced, add in broccoli, and simmer for 5 minutes. When broccoli is soft and broken down, add in cheese and stir until smooth. Remove from heat and let it sit for 5 minutes, then its ready to serve!
