Single Serve Chili

Recently I tried chocolate in my chili for the first time, and I can wholeheartedly say, I’m never making chili without it now! So rich, perfectly balanced flavor wise, and just an overall creamy mouth-feel. There’s nothing quite like a hearty bowl of chili, especially when it’s made just for you. This single serve chili recipe is perfect for cozy nights when you want something warm, rich, and satisfying- without a sink full of dishes. What makes this version truly special is the secret ingredient: a touch of baker’s chocolate. It might sound unexpected, but that bit of deep, unsweetened cocoa brings a beautiful complexity to the chili, balancing the heat and spice with a subtle richness that takes every bite up a notch. It’s comfort food, elevated- and perfectly portioned.
Single Serve Chili
Ingredients
- 4 oz lean ground beef
- ¼ yellow onion diced
- ¼ green bell pepper diced
- ½ cup crushed tomato
- 2 cups beef stock
- 1 tbsp Pretty Girls Eat Too All Purpose Seasoning
- 1 tsp chili powder
- 1 tsp cumin
- 2 squares 100% cocoa bakers chocolate
- ½ tsp cayenne powder
- 1 bay leaf
- 2 garlic cloves minced
- ½ cup black beans
- ½ cup pinto beans
- ½ cup kidney beans
Instructions
- To a small dutch oven, add in 1 tbsp of oil and brown ground beef on medium heat. Season with ½ tbsp all purpose seasoning.
- Add in onion and bell pepper. Sauté until transclucent and follow with garlic.
- To the pot, add in crushed tomatoes, beans, and beef stock. Stir to combine.
- Season with remaining all purpose seasoning, cumin, chili powder, cayenne, and add in chocolate and bay leaf. Stir to mix in all seasonings, and allow the chili 20 minutes to simmer while covered.
- Remove lid, stir, and serve immediately with cheese, sour cream, and chives for garnish alongside cornbread.
