Single Serve Chicken and Gnocchi Soup

Ingredients
  

  • 2 chicken thighs diced
  • ½ tbsp Pretty Girls Eat Too All Purpose Seasoning
  • ¼ yellow onion finely diced
  • 2 oz carrots julienned
  • 1 celery stalk thinly sliced
  • 1 tbsp unsalted butter
  • 1 tbsp all purpose flour
  • 2 cups unsalted chicken stock
  • ½ cup heavy cream
  • 1 cup gnocchi
  • ½ cup spinach
  • parmesan cheese optional

Instructions
 

  • Season chicken with ½ tbsp. with Pretty Girls Eat Too All Purpose Seasoning. Set aside
  • To a skillet on medium high heat, add in 1 tbsp. of oil and sear chicken until browned on both sides, remove from pan.
  • Add in carrots, onion, and celery and sauté until onions are transclucent.
  • Add butter and flour to the pan and cook for 2 minutes.
  • Lower heat to medium and follow with chicken stock and gnocchi. Cover and allow to thicken for 5 minutes.
  • Lower heat to a simmer, add in heavy cream, and cover for an additional 5 minutes.
  • Add in remaining All Purpose Seasoning and spinach. Stir and top with parmesan if using, Serve immediately
