Single Serve Chicken and Gnocchi Soup

Single Serve Chicken and Gnocchi Soup
Ingredients
- 2 chicken thighs diced
- ½ tbsp Pretty Girls Eat Too All Purpose Seasoning
- ¼ yellow onion finely diced
- 2 oz carrots julienned
- 1 celery stalk thinly sliced
- 1 tbsp unsalted butter
- 1 tbsp all purpose flour
- 2 cups unsalted chicken stock
- ½ cup heavy cream
- 1 cup gnocchi
- ½ cup spinach
- parmesan cheese optional
Instructions
- Season chicken with ½ tbsp. with Pretty Girls Eat Too All Purpose Seasoning. Set aside
- To a skillet on medium high heat, add in 1 tbsp. of oil and sear chicken until browned on both sides, remove from pan.
- Add in carrots, onion, and celery and sauté until onions are transclucent.
- Add butter and flour to the pan and cook for 2 minutes.
- Lower heat to medium and follow with chicken stock and gnocchi. Cover and allow to thicken for 5 minutes.
- Lower heat to a simmer, add in heavy cream, and cover for an additional 5 minutes.
- Add in remaining All Purpose Seasoning and spinach. Stir and top with parmesan if using, Serve immediately
