Single Serve Chicken and Gnocchi Soup

- 2 chicken thighs diced
- ½ tbsp Pretty Girls Eat Too All Purpose Seasoning
- ¼ yellow onion finely diced
- 2 oz carrots julienned
- 1 celery stalk thinly sliced
- 1 tbsp unsalted butter
- 1 tbsp all purpose flour
- 2 cups unsalted chicken stock
- ½ cup heavy cream
- 1 cup gnocchi
- ½ cup spinach
- parmesan cheese optional
Season chicken with ½ tbsp. with Pretty Girls Eat Too All Purpose Seasoning. Set aside
To a skillet on medium high heat, add in 1 tbsp. of oil and sear chicken until browned on both sides, remove from pan.
Add in carrots, onion, and celery and sauté until onions are transclucent.
Add butter and flour to the pan and cook for 2 minutes.
Lower heat to medium and follow with chicken stock and gnocchi. Cover and allow to thicken for 5 minutes.
Lower heat to a simmer, add in heavy cream, and cover for an additional 5 minutes.
Add in remaining All Purpose Seasoning and spinach. Stir and top with parmesan if using, Serve immediately
