As a child, I would have this several times a week, for both breakfast and dinner so I’m unable to decide whether I like it more as a breakfast or a lunch. What I do know, is that its quick and this recipe and super flexible. Somebody doesn’t like bell peppers? No problem. Pick eater who refuses to eat onions? No problem. Or you might have someone who needs to load up on more veggies. Again, no problem!. Salmon croquettes are the perfect lazy meal no matter the time of day.
Salmon Croquettes
Ingredients
- 2 cans pink salmon boneless
- ¼ yellow onion finely diced
- ¼ green onion finely diced
- 1 egg
- 2 cloves garlic grated
- 2 tbsp all purpose flour
- 1 tbsp black pepper
- 1 tbsp all purpose seasoning
- ½ tbsp smoked paprika
- 2 tbsp olive oil
Instructions
- Mix all ingredients except for oil in a bowl and combine well. Form into patties and use additional flour as needed to help patties form.
- To a skillet on medium-high heat, add in oil. Once heated, cook patties on both sides, for about 3 minutes per side. Remove from pan and serve alongside grits or rice.
