Chicken Flautas
Perfect for taco Tuesday, these rolled and fried tacos are super quick to make but do not skimp on the deliciousness. Chicken flautas are handheld, crispy, and full of flavor, what’s not to love!
What are Flautas?
Flautas are a Mexican dish where tortillas are filled with savory fillings, often meats, and then rolled and fried. They can be filled with various meats, cheeses, or even beans.
Toppings for Chicken Flautas
Depending on what you fill your flautas with you can utilize various toppings. However these are a few of MY favorite when using chicken:

- Cheese Sauce

Chicken Flautas
Ingredients
- 2 chicken breasts
- 1 tbsp all purpose seasoning
- 1 tbsp lime pepper seasoning
- 1 tsp chili powder
- 1 tsp cumin
- 1 tsp smoked paprika
- 1½ cup chicken broth
- 1 cup monterey and mozzarella cheese blend
- 12-15 corn tortillas
- oil for shallow frying
Cheese Sauce
- 2 cups milk
- 1 cup colby jack and cheddar jack cheese blend
- 1 tsp chili powder
- 1 tbsp salt and pepper
- 1 tsp cumin
- 1 tsp garlic powder
Instructions
- To a bowl, season chicken with all purpose seasoning, lime pepper, cumin, chili powder, and smoked paprika, Set aside.
- To a skillet on medium high heat, add in 2 tbsp of olive oil and sear chicken breasts on both sides for about 3 minutes on each side. Add in chicken broth and cover for about 10 minutes. Once chicken is cooked through, remove from broth and shred.
- Heat corn tortillas in the microwave for about 20 seconds with a damp paper towel covering them. This will help in making sure they're easy to roll.
- Once chicken is slightly cooled, toss cheese and chicken in the same bowl. Set aside.
- Add about 2-3 tbsp of chicken and cheese filling to the tortillas on the side thats closest to you and begin rolling. Make sure you roll tught enough, or the filling will slip out.
- To a skillet on medium high heat, add in enough oil to shallow fry. We want to cover the flautas only halfway in the oil. Place the tacos in the oil, sealed side down and fry for about 30-40 second or until golden. Once its time to flip the tacos over, they'll be sealed and you wont have to worry about them unraveling. Repeat on both sides until all tacos are cooked. Allow to drain on a cooling rack.Top with pico de gallo and cheese sauce. Serve immediately
Cheese Sauce
- To a saucepan on medium heat, bring milk to a simmer.Once milk is steaming, add in cheeses and whisk simultaneously.Once mixture is smooth, remove from heat and add in seasonings.Serve immediately.
