Single Serve Lasagna Soup

Yesterday, I officially declared it soup season-the first day I reached for my winter coat! And what better way to celebrate than with a cozy bowl of Single Serve Lasagna Soup? This recipe has all the comforting layers of classic lasagna-rich tomato broth, tender noodles, melty cheese-but in a quick, one-bowl single serve version made just for you. The best part? Because it’s a single serving, you don’t have to worry about the noodles soaking up all that flavorful broth while it sits in the fridge. It’s fresh, perfectly portioned, and exactly what cold-weather cravings call for.
Single Serve Lasagna Soup
Ingredients
- 2 oz lean ground beef
- 2 oz Italian sausage
- ½ shallot finely diced
- 2 garlic cloves minced
- ½ tbsp tomato paste
- ½ tbsp Pretty Girls Eat Too All Purpose Seasoning
- 1 tsp oregano
- 1 cup marinara sauce of your choice
- 2 cups beef stock
- 2 lasagna noodles broken into various shapes/sizes
- 2 tbsp heavy cream
Ricotta Mixture
- ⅓ cup ricotta cheese
- 1 tsp Pretty Girls Eat Too All Purpose Seasoning
- ½ tsp red pepper flakes
- 1 tsp oregano
- 1 tsp basil
- 2 tbsp parmesan
Instructions
- To a dutch oven, brown your sausage and ground beef on medium heat. Season with all purpose seasoning.
- Add in shallot and sauté until transclucent. Follow with garlic and sauté until fragrant.
- Add in tomato paste and cook for about 2 minutes, until it reaches a burgundy color.
- Add in marinara sauce, beef stock and lasagna noodles. Lower the heat to medium low, and cook for 9 minutes or until pasta reaches al dente.
- In the meantime, mix all ingredients for the ricotta mixture and set aside.
- Once noodles are al dente, add in half of ricotta mixture and if using, heavy cream ( just a splash to create a vodka sauce color). Stir until well combined.
- Serve immediately with remaining ricotta and additional parmesan. Enjoy !
