Single Serve Alfredo

Rich, velvety, and made with just a handful of simple ingredients, it delivers all the classic flavors of traditional Alfredo without the leftovers. Whether you’re cooking for one or just need a quick solo dinner fix, this dish comes together in under 20 minutes, making it ideal for weeknights, lazy weekends, or any time you need a little cheesy pick-me-up. Many of you on my social platforms have asked me for this recipe over the course of the year so far, and here it is !
Single Serving Alfredo
Ingredients
- ¾ cup Rigatoni pasta
- 1 cup heavy cream
- ⅓ shallot finely diced
- 4 garlic cloves minced
- ½ cup parmesan grated
- 1 tsp salt
- 1 tsp pepper
- 1 tbsp boursin cheese
- pasta water as needed
- ½ cup your favorite white wine chardonnay is my preferred
Instructions
- Boil pasta according to packaging in heavily salted water
- To a skillet on medium heat, melt butter and add in shallots once melted.
- Cook shallots until transclucent and follow with garlic.
- Once garlic is fragrant, add in ½ cup of your favorite white wine
- Once the wine has reduced by half, add in heavy cream and allow it to come to a simmer.
- Lower the heat to medium low and add in boursin cheese and parmesan. Mix until well combined and all cheese is melted.
- Add in pasta and any pasta water needed to make the sauce your desired consistency. Enjoy !
