How To Make Chicken Meatballs
- In a large bowl, mix ground chicken with breadcrumbs, egg, cheese, aromatics and seasonings
- Gently stir until just combined—overmixing makes them tough
- Use a spoon or scoop to portion out the mixture, then roll into meatballs
- Sear them in a skillet with a bit of oil, then bake until golden and cooked through
- Let them soak up the flavor of your alfredo sauce before serving over pasta
Chicken Alfredo Meatballs
Ingredients
- 1 lb ground chicken
- 1 small shallot finely diced
- 3 garlic cloves grated
- 1 egg
- ¼ cup bread crumbs
- 2 tbsp Pretty Girls Eat Too All Purpose Seasoning
- ½ tsp salt
- 1 tsp red pepper flakes
- 1 tsp dried oregano
- 2 tbsp olive oil
Alfredo Sauce
- 2 cups heavy cream
- ½ shallot finely diced
- 2 garlic cloves minced
- 1 tbsp Pretty Girls Eat Too All Purpose Seasoning
- ½ tsp salt
- 2 cups fresh spinach
- 1 cup Parmesan cheese
- Cooked pasta of your choice
Instructions
- To a bowl, combine all ingredients for chicken meat balls except for oil. Combine gently. Overmixing will cause the meatballs to be tough,
- Lightly oil your hands and roll meatballs into desired sized balls.
- To a skillet on medium-high heat, add in oil and begin searing meatballs just until they're browned.
- Finish cooking meatballs in the oven for 15 minutes at 350℉. Set aside once cooked to 165℉ internally.
Alfredo Sauce
- To a skillet on medium heat, add oil and sauté shallot and garlic for 1 minute until shallot is transclucent and garlic is fragrant.
- Follow with heavy cream and all seasonings. Whisk until combined. Lower heat to a simmer.
- Add in parmesan cheese and whisk until fully combined and sauce is smooth. Add in spinach and stir until wilted.
- Add in cooked pasta and serve with meatballs. Enjoy !
