Chicken Alfredo Meatballs

Ingredients
  

  • 1 lb ground chicken
  • 1 small shallot finely diced
  • 3 garlic cloves grated
  • 1 egg
  • ¼ cup bread crumbs
  • 2 tbsp Pretty Girls Eat Too All Purpose Seasoning
  • ½ tsp salt
  • 1 tsp red pepper flakes
  • 1 tsp dried oregano
  • 2 tbsp olive oil

Alfredo Sauce

  • 2 cups heavy cream
  • ½ shallot finely diced
  • 2 garlic cloves minced
  • 1 tbsp Pretty Girls Eat Too All Purpose Seasoning
  • ½ tsp salt
  • 2 cups fresh spinach
  • 1 cup Parmesan cheese
  • Cooked pasta of your choice

Instructions
 

  • To a bowl, combine all ingredients for chicken meat balls except for oil. Combine gently. Overmixing will cause the meatballs to be tough,
  • Lightly oil your hands and roll meatballs into desired sized balls.
  • To a skillet on medium-high heat, add in oil and begin searing meatballs just until they're browned.
  • Finish cooking meatballs in the oven for 15 minutes at 350℉. Set aside once cooked to 165℉ internally.

Alfredo Sauce

  • To a skillet on medium heat, add oil and sauté shallot and garlic for 1 minute until shallot is transclucent and garlic is fragrant.
  • Follow with heavy cream and all seasonings. Whisk until combined. Lower heat to a simmer.
  • Add in parmesan cheese and whisk until fully combined and sauce is smooth. Add in spinach and stir until wilted.
  • Add in cooked pasta and serve with meatballs. Enjoy !
