Garlic and Oil Pasta
There isn’t a dish simpler, that delivers this amount of flavor. Less than 10 ingredients and 20 minutes and you have a delicious meal or midnight snack if you’re me. Garlic and oil pasta was one of the first things I learned how to cook early on . As an adult, it’s only right that its a forever go-to for me.

Garlic and Oil Pasta
Ingredients
- ½ lb dry spaghetti
- 4 garlic cloves sliced
- 1 handful parsley roughly chopped
- 2 sprigs of green onion roughly chopped
- 1 handful of chives thinly sliced
- 3 tbsp good quality olive oil
- reserved pasta water as needed
Instructions
- To a pot of water, salt heavily and boil. Cook pasta halfway through, for about 4 minutes.
- To a skillet, add in olive oil and once heated to medium-high, add in garlic. Toast garlic, being careful not to burn. Toast red pepper flake if using.
- Throw in about half of the herbs and sauté until they're vibrant green. Add in one ladle of pasta water to skillet and allow to reduce.
- Transfer pasta to the skillet and allow to cook to al dente. Toss in remaining herbs. Serve immediately
