Garlic and Oil Pasta
There isn't a dish simpler, that delivers this amount of flavor. Less than 10 ingredients and 20 minutes and you have a delicious meal

- ½ lb dry spaghetti
- 4 garlic cloves sliced
- 1 handful parsley roughly chopped
- 2 sprigs of green onion roughly chopped
- 1 handful of chives thinly sliced
- 3 tbsp good quality olive oil
- reserved pasta water as needed
To a pot of water, salt heavily and boil. Cook pasta halfway through, for about 4 minutes.
To a skillet, add in olive oil and once heated to medium-high, add in garlic. Toast garlic, being careful not to burn. Toast red pepper flake if using.
Throw in about half of the herbs and sauté until they're vibrant green. Add in one ladle of pasta water to skillet and allow to reduce.
Transfer pasta to the skillet and allow to cook to al dente. Toss in remaining herbs. Serve immediately
