Single Serving Alfredo

- ¾ cup Rigatoni pasta
- 1 cup heavy cream
- ⅓ shallot finely diced
- 4 garlic cloves minced
- ½ cup parmesan grated
- 1 tsp salt
- 1 tsp pepper
- 1 tbsp boursin cheese
- pasta water as needed
- ½ cup your favorite white wine chardonnay is my preferred
Boil pasta according to packaging in heavily salted water
To a skillet on medium heat, melt butter and add in shallots once melted.
Cook shallots until transclucent and follow with garlic.
Once garlic is fragrant, add in ½ cup of your favorite white wine
Once the wine has reduced by half, add in heavy cream and allow it to come to a simmer.
Lower the heat to medium low and add in boursin cheese and parmesan. Mix until well combined and all cheese is melted.
Add in pasta and any pasta water needed to make the sauce your desired consistency. Enjoy !
