Dinner Rolls

Making The Fluffiest Dinner Rolls
Have you ever gone to restaurant, and you’re wondering how they got their bread so freaking fluffy ? Ratios and proofing time! The ratio of milk and butter to flour is important, and so is the proofing time. My sweet spot for this yield is 2 hours for the initial proof and then one hour after the dough is shaped. My rolls came out amazingly fluffy, buttery, and of course DELICIOUS!
Why Do You Have To Punch Your Dough When Baking ?
While punching your dough when baking looks quite fun, there’s actually a reason you’re expected to give your dough a big of tough love. Punching the dough releases all air still inside from the proofing process. “Deflating” the dough allows you to knead and shape your bread into your desired shape. Its kind of tough to turn a blown up balloon into a beautiful loaf of bread haha.

Dinner Rolls
Ingredients
- 1 tbsp rapid yeast
- 2 cups all purpose flour
- ¼ cup sugar
- ½ tbsp salt
- 3 tbsp unsalted butter
- ¾ cup warm milk
Rosemary Garlic Butter
- 1 tbsp rosemary minced
- 2 garlic cloves grated
- 3 tbsp unsalted butter melted
- 1 tsp salt
Instructions
- To a bowl, combine warm milk, yeast, and sugar. Allow yeast about 5 minutes to bloom. Once foamy transfer this mix to your stand mixer. If kneading by hand, disregard.
- To your stand mixer with the paddle attachment, add in salt, and begin adding in your flour, ½ cup at a time. By the time you add in all of your flour dough should be sticky. Switch over to the dough hook attachment and allow dough to kneed for 2 more minutes.If kneading by hand, knead for 10 minutes.
- Place dough into an oiled bowl and cover with saran wrap. Place in a warm place and allow to proof for two hours.
- Deflate dough (with a punch) and cut into 8 pieces (or more if you want smaller rolls.) Roll into your desired shape and place in your desired baking dish. Cover with saran wrap once more and allow to proof for one more hour.
- Remove saran wrap and bake at 375°℉ for 18-20 minutes.
Rosemary Garlic Butter
- To a bowl, add in all ingredients and mix to combine. Brush over hot rolls. Enjoy!
