Greek Inspired Chicken Salad
There are a million ways to make salad, and here’s another to add to your list! This Greek inspired chicken salad is similar to a traditional Greek salad but were swapping the lettuce for kale, and adding in a few extras. Greek-Inspired Chicken Salad

- Food Processor
Ingredients
- ⅓ lb kale chopped
- 1 lb boneless skinless chicken thighs
- 2 tbsp all purpose seasoning
- ½ tbsp smoked paprika
- ¼ red onion thinly sliced
- 3 oz grape tomatoes halved
- 1 English cucumber small diced
- ⅔ cup cooked orzo
- ¼ cup black olives chopped
- ¼ banana peppers
Salad dressing
- ⅓ cup greek yogurt
- ¼ cup mayonaise
- 3 tbsp lemon juice
- 2 tbsp garlic all purpose
- 3 tbsp dill
- 2 tbsp parsley
Instructions
- Season chicken thighs with all purpose seasoning and smoked paprika. Sear in a skillet on medium high heat on both sides until fully cooked. Remove from pan and set aside. Once cool, dice into small cubes.
- To a bowl, add in kale, tomato, cucumber, orzo, black olives, chicken, and banana peppers.
- To a food processor, add in Greek yogurt, mayonnaise, lemon juice, garlic all purpose seasoning, dill, and parsley. Pulse until blended.
- Add dressing to salad and toss until salad is well coated. Serve, and enjoy.
