Greek-Inspired Chicken Salad
This kale based salad has tons of veggies in it, along with a creamy dill dressing to coat everything.

- ⅓ lb kale chopped
- 1 lb boneless skinless chicken thighs
- 2 tbsp all purpose seasoning
- ½ tbsp smoked paprika
- ¼ red onion thinly sliced
- 3 oz grape tomatoes halved
- 1 English cucumber small diced
- ⅔ cup cooked orzo
- ¼ cup black olives chopped
- ¼ banana peppers
Salad dressing
- ⅓ cup greek yogurt
- ¼ cup mayonaise
- 3 tbsp lemon juice
- 2 tbsp garlic all purpose
- 3 tbsp dill
- 2 tbsp parsley
Season chicken thighs with all purpose seasoning and smoked paprika. Sear in a skillet on medium high heat on both sides until fully cooked. Remove from pan and set aside. Once cool, dice into small cubes.
To a bowl, add in kale, tomato, cucumber, orzo, black olives, chicken, and banana peppers.
To a food processor, add in Greek yogurt, mayonnaise, lemon juice, garlic all purpose seasoning, dill, and parsley. Pulse until blended.
Add dressing to salad and toss until salad is well coated. Serve, and enjoy.
