Coconut Curry Salmon
Ingredients
- 2 salmon filets
- 1 tbsp Maggi All Purpose Seasoning
- 1 tsp smoked paprika
- 1 tsp garlic powder
- ½ yellow onion sliced
- ½ green bell pepper sliced
- 3 garlic cloves minced
- 2 tbsp Red Thai curry paste
- 8 oz coconut milk
- 1 tbsp Maggi All Purpose Seasoning
- 1 tsp black pepper
- 1 tsp coriander
- 2 tbsp cilantro to garnish
Instructions
- Season your salmon filets with all purpose seasoning, smoked paprika, and garlic powder.
- To an oven safe skillet or cast iron on medium high heat, add in 2 tbsp. of oil. Sear filets flesh side down for two minutes. Flip filets over and bake in the oven for 12 minutes at 375℉. Set aside.
- To a separate skillet on medium high heat, add in 2 tbsp. of oil and sauté onions and bell pepper for 2 minutes or until onion is transclucent.
- Add in garlic and red Thai curry paste. Sauté until fragrant. This should take about 1 minute.
- Add coconut milk to the pan along with remaining all purpose seasoning, black pepper, and coriander. Stir to combine.
- Lower heat to medium and allow to simmer for 5 minutes.
- Introduce the salmon into the coconut curry sauce and baste the salmon.
- Garnish with cilantro and serve immediately.
