- 2 salmon filets
- 1 tbsp Maggi All Purpose Seasoning
- 1 tsp smoked paprika
- 1 tsp garlic powder
- ½ yellow onion sliced
- ½ green bell pepper sliced
- 3 garlic cloves minced
- 2 tbsp Red Thai curry paste
- 8 oz coconut milk
- 1 tbsp Maggi All Purpose Seasoning
- 1 tsp black pepper
- 1 tsp coriander
- 2 tbsp cilantro to garnish
Season your salmon filets with all purpose seasoning, smoked paprika, and garlic powder.
To an oven safe skillet or cast iron on medium high heat, add in 2 tbsp. of oil. Sear filets flesh side down for two minutes. Flip filets over and bake in the oven for 12 minutes at 375℉. Set aside. To a separate skillet on medium high heat, add in 2 tbsp. of oil and sauté onions and bell pepper for 2 minutes or until onion is transclucent.
Add in garlic and red Thai curry paste. Sauté until fragrant. This should take about 1 minute.
Add coconut milk to the pan along with remaining all purpose seasoning, black pepper, and coriander. Stir to combine.
Lower heat to medium and allow to simmer for 5 minutes.
Introduce the salmon into the coconut curry sauce and baste the salmon.
Garnish with cilantro and serve immediately.
