Marry Me Lobster Pasta
Ingredients
Poached Lobster
- 16 oz Lobster meat
- 4 tbsp unsalted butter
- 4 garlic cloves smashed
- 1 tsp all purpose seasoning I prefer Maggi
Pasta
- 1/2 lb Fettuccine Pasta
- 3 oz sun dried tomatoes Julienne sliced
- 1 shallot minced
- 3 garlic cloves minced
- 1/2 cup heavy cream
- 1/3 cup Reserved pasta water
- 1 tbsp salt
- 1 tbsp pepper
- 1 tsp red pepper flake
- 2 tbsp oregano
- 1 tsp garlic powder
- 2 tbsp oil from sun dried tomatoes
- 4 oz Parmesan cheese plus more for garnish
- 2 tbsp parsley minced
- 3 tbsp chives finely chopped
Instructions
- Cook fettuccine al dente, according to packaging in heavily salted water. Reserve 1 cup of pasta water. Set pasta aside.
- To a small skillet on medium low heat, melt 4 tbsp of butter. Add in lobster meat and all purpose seasoning. Allow to poach for 5 minutes and remove from heat. Set aside.
- To a separate skillet on medium high heat, add in oil from sun dried tomatoes.
- Sauté shallots until translucent and follow with garlic and sun dried tomatoes. Sauté for an additional minute.
- Lower heat to medium and add in heavy cream along with 1/3 cup of pasta water. Stir.
- Once combined, add in salt, pepper, red pepper flake, and oregano. Follow with Parmesan cheese and whisk to combine until cheese is melted.
- Add pasta and lobster (removed from butter) to sauce and toss to combine. Garnish with parsley and chives. Serve immediately.
