Poached Lobster
- 16 oz Lobster meat
- 4 tbsp unsalted butter
- 4 garlic cloves smashed
- 1 tsp all purpose seasoning I prefer Maggi
Pasta
- 1/2 lb Fettuccine Pasta
- 3 oz sun dried tomatoes Julienne sliced
- 1 shallot minced
- 3 garlic cloves minced
- 1/2 cup heavy cream
- 1/3 cup Reserved pasta water
- 1 tbsp salt
- 1 tbsp pepper
- 1 tsp red pepper flake
- 2 tbsp oregano
- 1 tsp garlic powder
- 2 tbsp oil from sun dried tomatoes
- 4 oz Parmesan cheese plus more for garnish
- 2 tbsp parsley minced
- 3 tbsp chives finely chopped
Cook fettuccine al dente, according to packaging in heavily salted water. Reserve 1 cup of pasta water. Set pasta aside.
To a small skillet on medium low heat, melt 4 tbsp of butter. Add in lobster meat and all purpose seasoning. Allow to poach for 5 minutes and remove from heat. Set aside. To a separate skillet on medium high heat, add in oil from sun dried tomatoes.
Sauté shallots until translucent and follow with garlic and sun dried tomatoes. Sauté for an additional minute.
Lower heat to medium and add in heavy cream along with 1/3 cup of pasta water. Stir.
Once combined, add in salt, pepper, red pepper flake, and oregano. Follow with Parmesan cheese and whisk to combine until cheese is melted.
Add pasta and lobster (removed from butter) to sauce and toss to combine. Garnish with parsley and chives. Serve immediately.
