Ingredients
  

Poached Lobster

  • 16 oz Lobster meat
  • 4 tbsp unsalted butter
  • 4 garlic cloves smashed
  • 1 tsp all purpose seasoning I prefer Maggi

Pasta

  • 1/2 lb Fettuccine Pasta
  • 3 oz sun dried tomatoes Julienne sliced
  • 1 shallot minced
  • 3 garlic cloves minced
  • 1/2 cup heavy cream
  • 1/3 cup Reserved pasta water
  • 1 tbsp salt
  • 1 tbsp pepper
  • 1 tsp red pepper flake
  • 2 tbsp oregano
  • 1 tsp garlic powder
  • 2 tbsp oil from sun dried tomatoes
  • 4 oz Parmesan cheese plus more for garnish
  • 2 tbsp parsley minced
  • 3 tbsp chives finely chopped

Instructions
 

  • Cook fettuccine al dente, according to packaging in heavily salted water. Reserve 1 cup of pasta water. Set pasta aside.
  • To a small skillet on medium low heat, melt 4 tbsp of butter.
    Add in lobster meat and all purpose seasoning. Allow to poach for 5 minutes and remove from heat. Set aside.
  • To a separate skillet on medium high heat, add in oil from sun dried tomatoes.
  • Sauté shallots until translucent and follow with garlic and sun dried tomatoes. Sauté for an additional minute.
  • Lower heat to medium and add in heavy cream along with 1/3 cup of pasta water. Stir.
  • Once combined, add in salt, pepper, red pepper flake, and oregano. Follow with Parmesan cheese and whisk to combine until cheese is melted.
  • Add pasta and lobster (removed from butter) to sauce and toss to combine. Garnish with parsley and chives. Serve immediately.
