Sweet Potato Pie Biscuits

Ingredients
  

  • 1 medium sweet potato
  • 2 cups all purpose flour
  • 1 tsp salt
  • ½ tsp baking powder
  • ¼ cup brown sugar
  • 4 tbsp cold butter
  • 4 tbsp cold milk more as needed
  • 1 tsp vanilla extract

Milk Wash

  • 5 tbsp milk
  • 1 tsp vanilla extract

Instructions
 

  • Preheat your oven to 400℉. Oil, salt, and wrap your sweet potato tightly in aluminum foil Bake for 1 hour, or until fork tender.
  • To a bowl, add in flour, baking powder, salt and brown sugar. Whisk to thoroughly combine.
  • Add in butter to flour mixture and crumble with hands or use a cutter. Flour should resemble sand once complete.
  • Add half of your baked potato into the mix and combine until flour mixture is incorporated with potato. Add in milk mixed with 1 tsp vanilla extract, 2 tbsp at a time and combine. Do not overmix dough. You just want the dough to no longer be wet or to have any dry clumps.
  • Roll dough out until about 1½ inch thick and cut your desired shared biscuits. Place biscuits onto a non-stick baking sheet.
    Brush the top of your biscuits with milk mixed with remaining vanilla extract and bake for 10 minutes at 425℉
  • Brush with butter once removed from the oven and serve immediately.
