Strawberry Poptart Blondies

Not your ordinary blondies, these strawberry Poptart blondies are sure to satisfy any sweet tooth. Think of an elevated sugar cookie. With everything make from scratch except for the sprinkles, you can also feel good about eating a clean-made sweet. Nowadays there are so many acids and gums and preservatives in store bought sweets, that this is a no brainer !
What is a Blondie?
Typically, blondies are vanilla brownies. In this case, we are utilizing a sugar cookie dough like dough for the “brownie” on the outer part of this dessert.

How to Make Strawberry Preserves for Strawberry Poptart Blondies
Strawberry preserves are extremely easy to make and will put your mind at ease when making sweets or even having a quick snack. With only a few ingredients and about 15 minutes, you’ll have delicious strawberry preserves. See my recipe here for how I make mine.
Strawberry Poptart Blondies
Equipment
- 6×6 non-stick baking dish
Ingredients
Dough
- 2½ cups All Purpose Flour
- 8 tbsp unsalted butter
- 1 cup sugar
- ½ tsp salt
- ½ tsp baking powder
- 2 tbsp vanilla extract
- 2 eggs
Icing
- 2 cups powdered sugar
- ¼ cup heavy cream
Assembly
- Strawberry preserves recipe linked in description
- small rainbow sprinkles
Instructions
- To a stand mixer, add in butter and sugar. Allow sugar to cream and fluff up for about 3 minutes. Follow with vanilla extract and eggs. Add in one egg at a time and allow to fully combine.Then, follow in with all dry ingredients and allow to combine. Chill dough for 10 minutes before shaping.2½ cups All Purpose Flour, 8 tbsp unsalted butter, 1 cup sugar, ½ tsp salt, ½ tsp baking powder, 2 tbsp vanilla extract, 2 eggs
- Using parchment paper, line the baking dish and add in half of the dough. Place another sheet of parchment on top and shape/smooth the dough to fit. Repeat this twice and chill dough again for about 10 minutes.Once firm, unwrap the dough and place them in the baking dish, sandwiching strawberry preserves in between the two layers of dough. Bake for 30 mins at 375℉Strawberry preserves
- To a separate bowl, whisk together powdered sugar and heavy cream until smooth to create icing2 cups powdered sugar, ¼ cup heavy cream
- Once removed from oven, place on cooling rack and allow to cool completely. Cover with icing and sprinkle sprinkles on the top. Enjoy.small rainbow sprinkles
