Cheesecake Stuffed Strawberries
This cheesecake stuffed strawberries are such a simple snack. They’re so quick to make and even quicker to eat. 5 ingredients and 10 minutes is all you need. For a cheesecake lover like me, I’ll make these for a midnight snack with no problem!

How to make Cheesecake Stuffed Strawberries
Prepare Your Strawberries
First things first: CLEAN YOUR FRUIT!!
We all know what strawberries look like, and it looks like they have pores. A perfect place for dirt and other unwanted impurities to hide. I like to be sure I’m consuming fresh and clean fruit with a simple vinegar and baking soda bath. Be sure to use cold water, so we don’t damage our berries and about 1tbsp of vinegar to every gallon of water. I use about 2tbsp of baking soda as well. This combination will fizz up. Allow your berries to soak for about 5 minutes, swishing them around occasionally, before draining and rinsing them. Once completely rinsed, pat your berries dry, and they are officially ready for consumtion.
Cutting and Hulling Your Strawberries
To your cleaned berries, you’re going to cut off the top and bottom. The reason we cut off the bottom is so that the berries can stand on their own. Since we’ll be using a filling for these, we want to make sure the filling is able to stay inside of the strawberries without toppling over.
Hulling your berries: If you own a strawberry huller, then GREAT, If not, no worries, its super easy to do. Take a paring knife and angle the tip towards the center of the strawberry, going around the white core, creating a circle. Once you have completed the circle, the core should just come right out.


Prepare Your Filling
The filling is incredibly easy to make. This can either be done with a stand mixer, hand mixer, or even by hand. You will place all ingredients into a bowl and combine using your preferred method until the mixture is smooth. Taste and adjust sweetness according to your own taste buds, but I don’t like an extremely sweet cheesecake. Plus, the strawberries are already sweet themselves. If you would like a touch more sweetness, add in more powdered sugar gradually until you reach your desired taste.

Filling Your Cheesecake Stuffed Strawberries
Place your filling in a piping bag with a star piping tip or a zip lock bag with the corner cut off, mimicking a piping bag. Carefully fill the center then go around the base of the strawberry, creating a mound like effect and then coming to a point.
Set these strawberries in the fridge for 20 minutes to aid the filling in settling into the strawberry. Once the filling has slightly firmed, remove and top with graham cracker crumbs or your favorite toppings.


Cheesecake Stuffed Strawberries
Ingredients
- 8 oz strawberries
- 4 oz cream cheese
- Β½ cup powdered sugar
- 1 tsp vanilla extract
- 1 tsp lemon juice
- graham crackers crumbled
Instructions
- To your clean strawberries, cut the tops and bottoms off. Cut a small outline around the white core of the strawberry and remove the center.
- Using a stand or hand mixer, add in cream cheese, powdered sugar, vanilla and lemon juice. Beat until combined and smooth. Add mixture into a piping bag or to a ziplock bag with the corner cut off to resemble a piping bag.
- Carefully fill the strawberries and place in the fridge for 20 minutes to set.
- Remove from refrigerator and top with crumbled graham crackers. Enjoy immediately.
