To your clean strawberries, cut the tops and bottoms off. Cut a small outline around the white core of the strawberry and remove the center.
Using a stand or hand mixer, add in cream cheese, powdered sugar, vanilla and lemon juice. Beat until combined and smooth. Add mixture into a piping bag or to a ziplock bag with the corner cut off to resemble a piping bag.
Carefully fill the strawberries and place in the fridge for 20 minutes to set.
Remove from refrigerator and top with crumbled graham crackers. Enjoy immediately.
