Salt and Vinegar Wings

Salt and vinegar wings are crispy, juicy, and packed with bold tangy flavor—just like the chips, but with even more bite.

Ingredients
  

Brine

  • 1 cup White vinegar
  • 1 cup warm water
  • 5 tbsp dark brown sugar
  • 5 tbsp sea salt
  • fresh dill
  • bay leaf
  • 3 garlic cloves
  • 2 cups cold water

Chicken Wings

  • 3 lbs. chicken wings
  • 3 tbsp all purpose seasoning
  • 4 tbsp corn starch
  • oil for frying
  • 3 tbsp unsalted butter melted
  • salt and vinegar dry seasoning

Instructions
 

  • To a bowl, combine warm water, vinegar, brown sugar, and sea salt. Whisk until salt and sugar is dissolved. Add in remaining brine ingredients and soak chicken wings in this brine for 6 hours refrigerated.
  • Remove the chicken wings from the brine and pat dry. Season with an all purpose seasoning and corn starch. Combine well.
  • Fry chicken wings at 360℉ for 8-10 minutes or until crispy, golden, and floating. Remove and place on a rack to drain of any excess oil.
  • To a bowl, top wings with melted butter and salt and vinegar seasoning sprinkle. Toss until well coated.
  • Garnish with coarse salt and dill. Serve immediately. Enjoy !
