Brined and Fried Hot Honey Turkey Wings

These turkey wings are fried to perfection after a 12 hour wet brine and then drenched in a hot honey lemon pepper sauce. With the sauce being homemade, you can make it as sweet or as spicy as you like. You better not forget the ranch either !

Brined and Fried Hot Honey Turkey Wings

These turkey wings are fried to perfection after a 12 hour wet brine and then drenched in a hot honey lemon pepper sauce. With the sauce being homemade, you can make it as sweet or as spicy as you like. You better not forget the ranch either !

Equipment

  • 1 Deep fryer

Ingredients
  

  • 4 turkey wings wing portion only
  • 1 gallon frying oil

Brine

  • 5 cups water divided, half hot and half cold
  • cup brown sugar
  • cup salt
  • 10 whole peppercorns
  • 1 bunch thyme
  • 1 sprig rosemary
  • 6 cloves garlic smashed

Hot Honey Sauce

  • cup Crystal hot sauce
  • 3 tbsp unstalted butter
  • 6 tbsp honey
  • 4 tbsp lemon pepper seasoning

Instructions
 

  • To a large bowl, add in hot water, brown sugar, and salt. Whisk until dissolved. Add in remaining cold water and rest of brine ingredients. Place turkey wings in the brine, cover, and store in the for 12 hours.
  • Remove wings from brine and pat dry with a paper towel. Season wings with salt, pepper, garlic powder and onion powder.
  • Heat your oil to 345℉ and fry your wings for 12 minutes or until thoroughly cooked.
  • To a small sauce pan on medium-low heat, melt butter. Add in hot sauce and honey. Whisk to combine. Add in lemon pepper seasoning.
  • Toss wings in sauce and sprinkle with more lemon pepper seasoning. Serve immediately
