Spinach and Artichoke Orzo
Ingredients
- 2` salmon filets
- ½ onion finely diced
- 1 can artichoke hearts, quartered roughly chopped
- 4 tbsp oil
- 1 tbsp unsalted butter
- ½ tbsp salt
- ½ tbsp pepper
- ½ tbsp smoked paprika
- 1 tbsp garlic powder
- ½ tbsp oregano
- 1 cup orzo
- 2 tbsp chicken bouillon
- 1 tbsp red pepper flakes
- juice and zest of 1 lemon
- 2 cups water
- 1 tbsp roasted garlic paste
- 5 oz spinach
- ¼ cup parmesan cheese
Instructions
- Season salmon with salt, pepper, garlic powder, smoked paprika, and salmon.
- In an oven safe skillet on medium high heat, add in 2 tbsp of oil and sear salmon on one side. Once browned, flip over and finish cooking in an oven on 350℉ for 10 minutes.
- To a skillet on medium high heat, add in 2 tbsp of oil and 1tbsp of butter. Sauté onions and artichoke hearts until onions are translucent, or for about 2 minutes.
- Add in orzo and toast for 3 minutes, stirring constantly to prevent burning. Season with chicken bouillon and red pepper flakes.
- Add in water, garlic paste, lemon zest and lemon juice. Lower heat to medium, and stir well. Cover and cook for 8 minutes.
- Remove lid and add in spinach. Stir until spinach is wilted.
- Add in parmesan and stir until melted.
- Serve immediately with salmon, enjoy!
