Spinach and Artichoke Orzo

Ingredients
  

  • 2` salmon filets
  • ½ onion finely diced
  • 1 can artichoke hearts, quartered roughly chopped
  • 4 tbsp oil
  • 1 tbsp unsalted butter
  • ½ tbsp salt
  • ½ tbsp pepper
  • ½ tbsp smoked paprika
  • 1 tbsp garlic powder
  • ½ tbsp oregano
  • 1 cup orzo
  • 2 tbsp chicken bouillon
  • 1 tbsp red pepper flakes
  • juice and zest of 1 lemon
  • 2 cups water
  • 1 tbsp roasted garlic paste
  • 5 oz spinach
  • ¼ cup parmesan cheese

Instructions
 

  • Season salmon with salt, pepper, garlic powder, smoked paprika, and salmon.
  • In an oven safe skillet on medium high heat, add in 2 tbsp of oil and sear salmon on one side. Once browned, flip over and finish cooking in an oven on 350℉ for 10 minutes.
  • To a skillet on medium high heat, add in 2 tbsp of oil and 1tbsp of butter. Sauté onions and artichoke hearts until onions are translucent, or for about 2 minutes.
  • Add in orzo and toast for 3 minutes, stirring constantly to prevent burning. Season with chicken bouillon and red pepper flakes.
  • Add in water, garlic paste, lemon zest and lemon juice. Lower heat to medium, and stir well. Cover and cook for 8 minutes.
  • Remove lid and add in spinach. Stir until spinach is wilted.
  • Add in parmesan and stir until melted.
  • Serve immediately with salmon, enjoy!
