Spinach and Artichoke Orzo

- 2` salmon filets
- ½ onion finely diced
- 1 can artichoke hearts, quartered roughly chopped
- 4 tbsp oil
- 1 tbsp unsalted butter
- ½ tbsp salt
- ½ tbsp pepper
- ½ tbsp smoked paprika
- 1 tbsp garlic powder
- ½ tbsp oregano
- 1 cup orzo
- 2 tbsp chicken bouillon
- 1 tbsp red pepper flakes
- juice and zest of 1 lemon
- 2 cups water
- 1 tbsp roasted garlic paste
- 5 oz spinach
- ¼ cup parmesan cheese
Season salmon with salt, pepper, garlic powder, smoked paprika, and salmon.
In an oven safe skillet on medium high heat, add in 2 tbsp of oil and sear salmon on one side. Once browned, flip over and finish cooking in an oven on 350℉ for 10 minutes.
To a skillet on medium high heat, add in 2 tbsp of oil and 1tbsp of butter. Sauté onions and artichoke hearts until onions are translucent, or for about 2 minutes.
Add in orzo and toast for 3 minutes, stirring constantly to prevent burning. Season with chicken bouillon and red pepper flakes.
Add in water, garlic paste, lemon zest and lemon juice. Lower heat to medium, and stir well. Cover and cook for 8 minutes.
Remove lid and add in spinach. Stir until spinach is wilted.
Add in parmesan and stir until melted.
Serve immediately with salmon, enjoy!
