Peri Peri Chicken
This simple sauce for Peri Peri chicken is perfect for many different types of protein. This South African Portuguese fusion sauce is made with veggies, chilis, spices, and herbs and comes together fairly quickly. Peri Peri Chicken

Ingredients
- 10 chicken leg quarters
- 2 tbsp grapeseed oil
- 2 tbsp all purpose seasoning
- ½ tbsp smoked paprika
- 3 tbsp unsalted butter
Peri Peri Sauce
- 3 red bell peppers chopped
- 2 red onions halved
- 1 head of garlic top removed
- 2 tbsp sherry wine vinegar
- 3 scotch bonnet or habanero peppers stems removed
- zest and juice of one lemon
- 2 tbsp grapeseed oil
- salt and pepper to taste
Instructions
- To a bowl, season chicken with oil, all purpose seasoning, and smoked paprika. Massage well and set aside to marinate until your sauce is done.
- Set oven to 450℉. Broil red peppers, onions, and garlic until peppers are blistered, turning frequently.
- Add vegetables to blender along with remaining sauce ingredients. Blend until smooth and add salt and pepper to taste.
- Add one cup of sauce to chicken and allow to marinate for an additional 30 minutes.
- Bake chicken on 375℉ for 40-45 minutes in a cast iron skillet with butter. Baste every 15 minutes.
- Remove form oven and serve immediately.
