Equipment

  • 1 Blender
  • 1 Roasting Rack + Baking Dish

Ingredients
  

  • 1 Whole Chicken
  • 1 cup Guinness beer
  • ¼ cup All purpose seasoning
  • 3 tbsp smoked paprika
  • 2 tbsp orange pepper seasoning

Marinade

  • All purpose seasoning Remaining
  • 2 tbsp dried oregano
  • 3 tbsp ground annatto
  • 2 tbsp ground cumin
  • 3 tbsp aji paste
  • 1 tbsp ginger paste
  • juice of 3 limes
  • 4 cloves of garlic
  • cup soy sauce

Aji Verde (Green Sauce)

  • ½ cup Mayo
  • 2 jalepenos seeded
  • 2 tbsp olive oil
  • 1 tbsp ground coriender
  • 1 bunch cilantro
  • 3 cloves of garlic
  • juice of 2 limes
  • 2 tbsp salt
  • 1 tbsp aji paste

Instructions
 

  • Preheat your oven to 375℉
  • Scrub your chicken with lemon, rinse carefully, and pat dry. (Washing your chicken is optional in some households, but not mine!)
  • Drizzle olive oil on the chicken and season thoroughly on all sides, and inside cavity. Ensuring chicken is completely covered in seasoning.
  • To a blender, add in all ingredients for the marinade and blend until smooth. Coat chicken, inside and out, with marinade.
  • Place chicken on the middle rack and roast for 1 hour and 10 minutes (For a 3lb chicken). Please adjust time for different sizes of chickens. Every 15 minutes, open the oven and spray the chicken with Guinness. Half way through the cook time, flip the chicken over to ensure the chicken gains coloring on all sides.
  • While the chicken is cooking, add in all of the Aji Verde ingredients to a blender. Blend until smooth and then taste for salt.
  • Once chicken is fully cooked, remove from oven and slice to your liking. Serve immediately. Sauce will last for up to 5 days in the refrigerator when stored in an air tight container.
