chicken leg quarters

red bell peppers

top removed

sherry wine vinegar

scotch bonnet or habanero peppers

zest and juice of one lemon

grapeseed oil
salt and pepper to taste
Instructions
To a bowl, season chicken with oil, all purpose seasoning, and smoked paprika. Massage well and set aside to marinate until your sauce is done.
Set oven to 450℉. Broil red peppers, onions, and garlic until peppers are blistered, turning frequently.
Add vegetables to blender along with remaining sauce ingredients. Blend until smooth and add salt and pepper to taste.
Add one cup of sauce to chicken and allow to marinate for an additional 30 minutes.
Bake chicken on 375℉ for 40-45 minutes in a cast iron skillet with butter. Baste every 15 minutes.
Remove form oven and serve immediately.
