Corn Avocado Salad
Ingredients
- 1 can corn or fresh corn – you’ll need about 3 ears
- 1 avocado diced
- 1/4 red onion thinly sliced
- 3 limes juiced
- 1 tsp Pretty Girls Eat Too All Purpose Seasoning
- 1/2 tsp cumin
- 1/2 tsp chili powder
- 3/4 tsp salt
- 2 tbsp oil
- 1/4 cup cilantro chopped
Instructions
- To a skillet on medium-high heat, add in oil and corn. Season with Pretty Girls Eat Too All Purpose Seasoning, cumin, chili powder, and salt.
- Stir until combined, and sauté until corn has char marks. Remove from the pan and place in a bowl to cool.
- Toss cooled corn with onion, cilantro, lime juice, and avocado.
- Serve immediately & enjoy.
