Corn Avocado Salad

Ingredients
  

  • 1 can corn or fresh corn - you’ll need about 3 ears
  • 1 avocado diced
  • 1/4 red onion thinly sliced
  • 3 limes juiced
  • 1 tsp Pretty Girls Eat Too All Purpose Seasoning
  • 1/2 tsp cumin
  • 1/2 tsp chili powder
  • 3/4 tsp salt
  • 2 tbsp oil
  • 1/4 cup cilantro chopped

Instructions
 

  • To a skillet on medium-high heat, add in oil and corn. Season with Pretty Girls Eat Too All Purpose Seasoning, cumin, chili powder, and salt.
  • Stir until combined, and sauté until corn has char marks. Remove from the pan and place in a bowl to cool.
  • Toss cooled corn with onion, cilantro, lime juice, and avocado.
  • Serve immediately & enjoy.
