This green seasoning recipe will give you the flavors of many herbs and veggies without chopping them for each and every dish. With whatever ingredients you want to use, this can come together in less than 5 minutes with a blender.

What is Green Seasoning?

This is a blend of veggies and herbs that can be the base for many dishes and stews. Also commonly called sofrito or epis. Its also commonly used in rices and in even sauces. There’s no specific measurements or exact ingredients. This is tailored to your own taste buds. If you’re not a fan of spice, then you can omit any hot peppers. If you’re one of the “cilantro tastes like soap” population, then that can be omitted as well.

Equipment

  • Blender

Ingredients
  

  • 1 bunch of cilantro
  • 1 bunch of parsley
  • 1 yellow onion cut into quarters
  • 10 cloves of garlic
  • 5 sprigs green onion
  • 10 sprigs thyme
  • 1 scotch bonnet or habanero
  • 2 green bell peppers cut into quarters
  • 2 tbsp vinegar
  • 3 tbsp olive oil
  • 3 tbsp salt

Instructions
 

  • Add all ingredients to a blender. Once smooth, store in an air tight container. Refrigerate for up to 2 weeks or freeze for up to 3 months.
