Ingredients

strawberries
tops cut
zest of 1/2 lemon
juice of one lemon

sugar

cornstarch slurry

Instructions
Cut the tops off of 1lb of strawberries and add them to a medium sized saucepan.
Turn heat on medium low and add in sugar, lemon zest, and lemon juice.
Once sugar melts, begin to mash strawberries softly and allow to cook down until you have a jam like texture.
Add in cornstarch slurry and cut the heat. Stir until thickened and allow to cool.
Store in an airtight container for 4-6 weeks, refrigerated.
