Strawberry Preserves

Ingredients
  

  • 1 lb strawberries tops cut
  • zest of 1/2 lemon
  • juice of one lemon
  • 1/4 cup sugar
  • 1 tsbp cornstarch slurry
  • 1 tsp salt

Instructions
 

  • Cut the tops off of 1lb of strawberries and add them to a medium sized saucepan.
  • Turn heat on medium low and add in sugar, lemon zest, and lemon juice.
  • Once sugar melts, begin to mash strawberries softly and allow to cook down until you have a jam like texture.
  • Add in cornstarch slurry and cut the heat. Stir until thickened and allow to cool.
  • Store in an airtight container for 4-6 weeks, refrigerated.
