Smothered Green Beans

- 2 lbs green beans
- 1 yellow onion sliced
- 3 garlic cloves chopped
- 3 tbsp unsalted butter
- 3 tbsp all-purpose flour
- 2 cups chicken broth
- 1 tbsp cajun seasoning
- ½ tbsp black pepper
- ½ tbsp smoked paprika
- ½ tbsp Nature's seasoning
- 2 smoked turkey leg
- 2 russet potatoes peeled and cubed
To a pressure cooker, add in turkey legs along with 1 cup of chicken stock. Pressure cook for 40 minutes.Remove turkey legs and separate the meat from the bone. Set aside. To a Dutch oven on medium high heat, add in 3 tbsp. of butter. Once melted, sauté onions until translucent. This should take about 2 minutes.
Add in garlic and seasonings. Stir until fragrant.
Add in flour, and cook for 2 minutes. Add in remaining chicken stock and stir briefly. Allow to thicken for 5 minutes.
Add washed green beans and potatoes to pot and cover for 10 minutes. Stir and add in turkey meat. Lower heat to medium low and allow to cook for 15 more minutes until the potatoes and green beans are fork tender.
