Single Serve Curry Goat

Single serve curry goat packed with bold Jamaican flavor. Tender, spicy, and slow-cooked to perfection for a solo comfort meal.

Ingredients
  

  • 1 lb bone in goat shoulder
  • ¼ yellow onion diced
  • 1 carrot sliced
  • 1 tbsp ginger grated
  • 1 potato cubed
  • 2 garlic cloves minced
  • ¼ green bell pepper diced
  • 2 tbsp curry powder Betapac brand preferred
  • ½ tbsp Pretty Girls eat Too All Purpose Seasoning
  • 1 tsp salt
  • 1 scotch bonnet
  • 2 tbsp green seasoning
  • 2 scallion sprigs sliced
  • 3 sprigs of thyme

Instructions
 

  • To a bowl, combine goat meat with green seasoning, salt, all purpose seasoning, and half of the curry powder. Set aside
  • To a dutch oven on medium heat, add in 4 tbsp of oil and toast remaining curry powder with onions, bell pepper, scallion, ginger, and garlic for one minute. Follow with goat meat and brown for 10 minutes.
  • Lower heat to medium low and cover. Cook for 1 hour, only uncovering to stir every 10 minutes. This will allow the meat to render the fat and create its own juices.
  • Add in 2 cups of hot water and allow the goat to cook on medium heat until tender. This should take 1 hour to evaporate. Add water as needed if the goat meat is not covered.
  • Once goat is tender, add in carrots, thyme, scotch bonnet, and potato. Cook until tender. This should take about 15 minutes.
  • Serve immediately.
