Shrimp Ceviche
Fresh shrimp ceviche made with avocado, cucumbers, roma tomatoes, and more fresh ingredients!

- 15 Limes juiced, divided
- 2 lbs Raw, Peeled and Deveined Colossal Shrimp chopped
- 2 Roma tomatoes seeded and diced
- 2 Avocados diced
- 1/2 Red onion finely diced
- 1/2 Cucumber seeded and diced
- 1 Guajillo chile
- 3 tbsp Sea salt
- 1 Orange juiced
- 1 bunch Cilantro chopped
Rinse your shrimp in a bowl of cold water and remove all tails
Add shrimp to a bowl and cover with the juice of 10 limes and 3 tbsp salt. Make sure shrimp is submerged in lime juice. Cover and let marinate for 1 hour. Shrimp will no longer be opaque after the hour, and will have developed an orange tint.
To a blender, add guajillo chile, orange juice, remaining lime juice and salt and blend until smooth.
Remove shrimp from refrigerator. Add salsa, all remaining ingredients, and mix well.
Allow to marinate for 30 more minutes and serve !
