Salmon sushi bake for one: a cozy, single-serve mix of seasoned rice, flaky salmon, and creamy, savory toppings baked to golden perfection.

- 1 cup cooked sushi rice
- 1 salmon filet
- ½ tsp Pretty Girls Eat Too All Purpose Seasoning
- 1 tbsp mirin
- 1 oz cream cheese softened
- 2 tbsp kewpie mayo
- 1 tbsp sriracha
- 1 tsp yuzu kosho
- 1½ tbsp furikake
Season salmon with all purpose seasoning. Sear in a skilled on medium heat until the flesh has a crust and the skin is crispy. Remove from skillet and place in a bowl.
Combine salmon with mayo, sriracha, cream cheese, green onions. Break up salmon until its a smooth texture.
Combine sushi rice and mirin in a separate bowl
Layer rice, furikake, and salmon mixture in a small baking dish. Bake at 400 for seven minutes.
Top with spicy mayo, scallion, and serve with seaweed chips.
