Queso Fundido

Queso fundido is a creamy, melted cheese dish, often with chorizo or peppers, served with tortillas or chips for dipping.

  • Cast Iron Skillet

Ingredients
  

  • 8 oz chorizo
  • 1 can rotel
  • 12 oz Chihuahua cheese
  • ¼ cup cilantro

Instructions
 

  • Brown chorizo on medium heat in cast iron skillet. Set some aside for garnishing.
  • Add in roten to the chorizo and stir. Layer cheese on top of the chorizo/rotel mixture.
  • Bake at 375℉ for 7 minutes.
  • Garnish with remaining chorizo, rotel, and cilantro.
  • Serve immediately with tortilla chips or warm tortillas. Enjoy.
