Greek Turkey Meatballs

- 1 lb ground turkey meat 87% lean
- 1 1/2 tbsp salt
- 1 tbsp black pepper
- 1 tbsp coriander
- juice and zest of one lemon
- ½ tbsp ground thyme
- 3 tbsp parsley minced
- 3 tbsp cilantro minced
- 2 tbsp mint
- ¼ red onion grated
- 3 garlic cloves minced
- 1 tbsp dried oregano
- 1 egg beaten
- ½ cup breadcrumbs
To a bowl, combine all of the ingredients. Mix well, but do not overmix, that will cause the texture to become dense.
Put a small amount of oil in your hands and begin rolling meat into golf ball sized meatballs.
To a skillet on medium- high heat, add in 3 tbsp. of oil, and 1 tbsp. of butter. Add in meatballs and brown on each side. This should take 5 minutes total.
Add to a non-stick baking sheet and bake at 375 degrees for 15 minutes.
Remove from oven and serve with tzatziki, orzo, pita, or salad !
