To a heavy pot, such as a dutch oven, add in the oil and once thats heated to medium high, add in sausage and cook until seared on both sides. Remove sausage from pot.
1 lb smoked beef sausage, 1 tbsp olive oil
To that same pot, add in all bell peppers and onion. Sauté for 5 minutes, or until slightly softened. Add in green seasoning and cook for 2 minutes. Add in garlic cloves and sauté until fragrant, or about 1 minute.
1 yellow bell pepper, 1 orange bell pepper, 1 red bell pepper , 1 yellow onion, 3 cloves of garlic, 2 tbsp green seasoning
Lower heat to medium and add in all cabbage. Stir to combine all vegetables and add in water. Cover for 10 minutes, removing lit halfway through to stir.
1 head of cabbage, 3 tbsp water
Remove lid and add in seasonings. Cook until desired tenderness.I like my cabbage still with a slight crunch to it, so I cook for an additional 3 minutes. If you like a softer cabbage, cook for another 5-7 minutes. 1 tsp Tony's Cajun Seasoning, 1 tbsp All Purpose Seasoning, ¼ tsp Sazon
Serve immediately and enjoy. This dish can last for up to 3 days when properly stored and refrigerated.
