French Onion Pasta
One pot pasta dish filled with caramelized onions and oozing with gruyere cheese

- 2 lbs yellow onions thinly sliced
- 2 tbsp olive oil
- 6 tbsp unsalted butter
- 2 tbsp Worcestershire sauce
- 3 tbsp salt and pepper
- ½ lb spaghetti
- 2 cups beef stock
- ½ cup gruyere cheese
- parsley chopped, to garnish
To a skillet on medium-high heat, add olive oil to the skillet. Once hot, add in onions and salt. Stir and cover. Uncover every 5 minutes and stir. Lower heat to medium after first 10 minutes. Halfway through, add in Worcestershire sauce and cook for 40 minutes total or until completely caramelized.
To the same skillet, add in spaghetti, beef stock, butter. Cover and cook for 8 minutes.
Uncover, check doneness of pasta and stir ! (Similar to how you would making risotto). Add in cheese and stir until combined.
Top with more Gruyere cheese and parsley. Serve immediately
