To a pot of water, add in chicken breasts, tomato, onion, garlic, chiles de arbol, and salt. Allow to boil until chicken is fully cooked through.

Add in all ingredients from the pot of boiling water to your blender. Add in ΒΌ cup of liquid from pot along with 2 tbsp of adobo sauce and 1 chipotle pepper, into the blender. Blend until smooth. Season and blend once more.

Shred your chicken breasts and add to a skillet on medium heat. Follow with sauce and allow to cook for 5 minutes. Turn heat off, and add in your cilantro and lime juice. Cover and allow to meld together for another 5 minutes.
