Single Serve Spicy Rigatoni

- ¾ cup Rigatoni mezzi pasta
- .5 oz pancetta
- ½ shallot diced
- 2 garlic cloves diced
- 1 tbsp tomato paste
- 1 cup pasta water more as needed
- 3 Calabrian chilis chopped
- 2 tbsp heavy cream
- parmesan to taste
Boil pasta in salted water until al dente. Set aside and reserve water.
To a pan on medium-low heat, render pancetta until crispy. Remove from pan and allow the fat to remain.
To the same pan, add in shallot, and once transclucent, follow with garlic. Sauté until fragrant.
Add in tomato paste and sauté until burgundy
Carefully add in vodka and allow alcohol to cook off. Alcohol may flame.
Once alcohol is cooked off and you can no longer smell it, add in pasta water and allow sauce to thicken. Add heavy cream and stir. Blend until smooth and return sauce to pan.
Add pasta into sauce and toss until combined.
Top with parmesan and serve immediately.
