Mango Sticky Rice
Mango sticky rice is a sweet Thai dessert made with coconut sticky rice and fresh mango—simple, comforting, and delicious.

- ⅔ cup glutinous rice
- ⅓ can unsweetened coconut milk
- ¼ cup sugar
- ¼ tsp salt
- juice of ½ lime
- 1 tsp cornstarch
- 1 yellow mango
- black sesame seed to garnish
Rinse rice until water runs clear and soak for at least 1 hour.
Place rice in cheesecloth and steam for 30 minutes or until tender.
To a saucepan on medium low heat, combine coconut milk, sugar, lime juice and salt. Whisk until combined.
Once rice is cooked, combined half of the coconut milk mixture into the rice. Mix the remaining coconut milk with a cornstarch slurry made with cornstarch and 2 tbsp. coconut milk. Cook until thickened and remove from heat.
Slice mango, serve alongside rice and top with thickened coconut cream.
Garnish with black sesame seed and enjoy !
