Creamy Shrimp Scampi Pasta

This creamy shrimp scampi pasta is amazing for a weeknight dinner. Its quick, fulfilling, and you don't have to sit at a restaurant table to get it !

Ingredients
  

  • 2 lbs colossal shrimp
  • 1/2 lb angel hair pasta
  • 1 cup AP flour
  • 1 cup white wine your choice, just no Moscato
  • 1 shallot finely diced
  • 1 cup basil chiffonade
  • 3 cloves garlic minced
  • 2 roma tomatoes seeded and finely diced
  • juice of one lemon
  • 1 ½ cup heavy cream
  • salt and pepper to taste
  • ¼ cup all purpose seasoning divided
  • ¼ cup parmesan cheese freshly grated

Instructions
 

  • Season cleaned shrimp with one 2 tbsp of all purpose seasoning. Season AP flour with 3tbsp of all purpose seasoning. Dredge shrimp in the flour and move to a drying rack to rest for 5 minutes.
  • To a skillet, add 4 tbsp of oil and shallow fry the shrimp on medium high heat, until golden brown and crispy on both sides. Return to a clean rack to drain of any excess oil. Set aside.
  • To the same skillet, sauté shallot until translucent, about 1-2 minutes. Follow with garlic and sauté until fragrant, about another minute. Add in white wine and scrape the bottom of the pan to release and brown bits.
    These brown bits are known as "fond" and bring depth and flavor to any dish.
  • In a separate pot of salted water, boil angel hair for about 4 minutes.
    When cooking angel hair, you need to time it correctly or else your pasta will be overcooked. Usually, I add my pasta straight from the pot into whatever sauce I'm making, so its crucial to time it correctly.
  • Once your wine has reduced by half, add in heavy cream, tomatoes, and remaining all purpose seasoning. Cook until sauce has thickened, about 5 minutes on medium heat.
    By this time, your angel hair will be ready to add into the sauce, perfect timing!
  • Add your pasta straight from the pot, adding in more pasta water if needed. Cook for an additional minute, adding in parmesan, and basil. Stir to combine and add salt and pepper to taste as needed.
  • Top with shrimp and serve immediately.
